Anyone for cake?......

So oranges are good for you....yep?

But.....this is chocolate week so I'm sure we can take this orange and mix it up a bit!

This cake is a rich, moist delicious cake with a gorgeous orangy tang throughout. I wouldn't even want to work out the calorie content though, but as Cheryl would say 'You're worth it!'

Dark Chocolate & Valencia Orange Cake

For the cake mix I need:
1 orange
100g plain chocolate
3 eggs
280g caster sugar
240ml sunflower oil
25g cocoa powder
250g plain flour
1.5tsp baking powder
Chocolate Ganache topping:
200g plain chocolate
225ml double cream

Now for the tricky bit:

oil, eggs & sugar

1. pierce orange and cook in boiling water for 30mins. Whizz in a food processor until smooth and leave to cool

2. Preheat oven to 160C & grease and line a 9" cake tin (although I used 2 1lb loaf tins to make serving easier). Melt the 100g plain chocolate, leave to cool.

3. Beat eggs, sugar & oil (lightly) add the pureed orange then stir in the cooled melted chocolate. Sift in the cocoa, flour and baking powder. Mix well, pour into your lined tin. bake in the oven for approx 55 mins. Check the cake after 45mins and cover with tin foil if it is browning too much. Cool for 10mins then turn out.

 4. To make the chocolate ganache, melt the 200g plain chocolate. Gently boil the double cream then pour it over the melted chocolate and stir. Leave to cool until firm enough to spread over the cake (This could take about 90mins)
Decorate as you wish:

Lastly boil kettle, make cup of tea and enjoy!
